Vegan & Gluten-Free Instant Pot French Toast Casserole
Description
You may have made a cinnamon roll french toast casserole or french toast bake, but those can take a long time to make. With the instant pot craze going on, we thought we would try to shorten the preparation time needed for traditional french.

Prepare the Bread:
Cut the loaf into bite-size pieces and let it dry overnight on a cookie sheet or pan. In a large mixing bowl, combine the cubed gluten-free bread and nuts (if using).
You can use parchment paper in the bottom too for easy release. (you can use the special pan made for IP too if you have it). -
Make the Custard:
In another bowl, whisk together the almond milk, chickpea flour, maple syrup, vanilla extract, cinnamon, nutmeg (if using), and salt until smooth.

Combine:
Pour the custard mixture over the bread cubes, making sure all pieces are soaked. Gently mix to coat the bread.

Prepare the Instant Pot:
- Grease a 7-inch round baking dish or an Instant Pot-safe dish that fits inside your Instant Pot.
- Pour the bread mixture into the greased dish.

Add Water to the Instant Pot:
Pour 1 cup of water into the bottom of the Instant Pot to create steam.

Cook:
Place the dish with the bread mixture on the trivet and lower it into the pot. Seal the lid and set the Instant Pot to cook on High Pressure for 25 minutes.

Release Pressure:
Once cooking is complete, allow for a natural release for about 10 minutes, then perform a quick release to let out any remaining steam.

Serve:
Carefully remove the dish from the Instant Pot. Let it cool slightly before cutting into squares. Serve warm with additional maple syrup, fresh berries, or powdered sugar.
